I recently discovered Andrew Bernard, aka The Nard Dog Cooks, on Instagram. Honestly, I don’t even remember how long ago it was, but I know his content just popped up on my For You page, and I saved it straight into my cooking folder. I totally forgot about it for a while, but one day, while I was meal prepping for the week (which I always do for work), I found myself running out of ideas. You know that feeling when you think, “I’ve done everything already, I need something new and exciting, but also quick and easy”? That was me.
So, I was scrolling through my Instagram folder full of saved recipes and then bam—there it was. Andrew’s reels, with their signature vibrant colors and warm vibes. I was like, “Okay, it’s winter right now, this is exactly what I need.” I started cooking with him, and my first dish was creamy coconut rice with chickpeas. It was seriously so good that I ended up making it at least three more times. I couldn’t get enough of it. And the best part? Even my coworkers started asking what it was because it looked so delicious. Turns out, one of them had been cooking with Andrew too, so we actually bonded over his recipes!
What I love about Andrew’s cooking is that it’s all so simple and easy to follow. His videos are short, straight to the point, and super quick—no long, complicated steps. Everything he makes is packed with flavor and color, and it’s like he puts so much thought into creating these vibrant, spicy meals. Most of his recipes are even one-pot, so they’re perfect for meal prepping. The dishes are quick, but they’re still packed with nutrients, which is exactly what I’m all about. I’m also a huge fan of his anti-inflammatory dinner recipes—they’ve been a game changer for me.
So far, I’ve only tried a couple of his dishes, but I’m excited to try more. I really hope Andrew comes out with a cookbook soon. I’d love to add it to my collection, and I can’t wait to see what else he has up his sleeve.
